There may not be a more welcoming and warming soup than Chicken Noodle Soup. The wonderful flavors from all the herbs makes this Chicken Noodle Soup perfect for chilly evenings. This soup is fairly simple and easy to make. Most of the time we have all the ingredients available at home to make this soup.
You can use Farfalle or Egg Noodle Pasta, however I have used Tubetti Rigati pasta since they are small in size. Carrots and celery are the perfect vegetables to be used in Chicken Noodle Soup. You can also make the Chicken Stock/Broth at home and use that here.
Here are the different types of herbs I have used to add extra flavors. Except Rosemary all others are dry herbs.
Once the vegetables are sautéd, add the broth. The vegetables will be boiled in the broth. Make sure to cover the Wok with a lid.
Add all the herbs and again cover the lid.
Italian or Garlic Bread would be the perfect companion to the Chicken Noodle Soup.
Be safe and stay at home for next few days.
- 300gm Chicken
- 60gm Pasta
- 2 Carrots
- 3 Celery Sticks
- ½ Medium Sized Onion
- 3-4 Garlic Cloves
- Parsley
- ½ Tsp Dried Thyme
- ½ Tsp Rosemary
- ½ Tsp Dried Sage
- ½ Tsp Dried Oregano
- 4 Cups Chicken Broth
- 1-2 Bay Leaves
- 2 Tbsp Olive Oil
- 1 Tsp Garlic Powder
- Butter
- Salt
- Black Peeper Powder
- Bake the Chicken for 20-25 mins in oven with Salt, Peeper Powder, Garlic Powder, then shred it.
- Boil the Pasta with Salt and keep it aside.
- Cut the Carrots, Onion & Celery in small pieces.
- Heat (in Medium Flame) Olive Oil in a Wok, add Bay Leaves. Afterwards add Onion & Celery. Stir for a min.
- Add the Carrots, salt and Pepper. Stir again for 2 mins.
- Add the minced Garlic (1 tbsp) and cover the wok with a lid for 2-3 mins.
- Add the Chicken Broth, then add all the spices (Thyme, Rosemary,Sage, Oregano).
- Reduce the flame to low-medium, cover the Wok with a lid and let your soup cook for another 5 mins.
- Add the boiled pasta, Chicken, Black Pepper Powder & 1 Tbsp Butter. Taste the soup and adjust the salt if needed. (I had added pinch of sugar just to adjust the taste as per my choice)
- Cover the Wok with a lid and cook for another 1-2 mins.
- Your Chicken Noodle Soup is now ready to be served.

The idea is to use a green vegetable in the soup. You can use green pea or spring onion in place of celery.
