Schezwan Noodles with Chicken and Shrimp

Ingredients
For Marination
  • 250gm Chicken
  • 100gm Shrimp (Medium size)
  • 1 Tablespoon Soya Sauce
  • ½ Tablespoon Wine Vinegar
  • ⅛ Teaspoon Black Pepper Powder

For Schezwan Sauce
  • 75gm Garlic Chopped (Approximately 5 Tablespoons )
  • 20 Pieces Whole Dry Red Chili
  • 1 Tablespoon Ginger ( Chopped or Paste ) [the_ad id="2092"]
  • 3 Tablespoons Sesame Oil/Till Oil (Vegetable Oil as substitute)
  • 1 Tablespoon Honey
  • ½ Teaspoon Salt
  • 1 Tablespoon Wine Vinegar
  • 1 Tablespoon Soya Sauce

For The Chicken & Shrimp
  • 3-4 Tablespoons Vegetable Oil
  • ½ Teaspoon Red Chili Flakes
  • ¼ Teaspoon Salt
  • 1 Tablespoon Red Chili Sauce

For Boiling The Noodles
  • 300gm Noodles
  • ½ Teaspoon Salt
  • 1 Tablespoon Vegetable Oil

Final Step
  • 2 Tablespoons Vegetable Oil
  • 130gm Cabbage
  • 230gm Carrot
  • 130gm Bell Pepper/Capsicum
  • ½ Teaspoon Red Chili Flakes
  • 3 Tablespoons Red Chili Sauce
  • 1 Tablespoon Lemon Juice
  • Salt (if needed)
Instructions
Marination:
  1. Cut the chicken in small pieces, then marinate both the Chicken and Shrimp for ½ an hour with the ingredients mentioned above.

Schezwan Sauce
  1. You need to soak the Dry Red Chili in water well ahead at least for 4-5 hours. Take a blender, add the soft red chili, garlic, ginger and make a paste.
  2. Heat Sesame Oil in a small pan and keep it in a small bowl. [the_ad id="2092"]
  3. While the oil is hot, add honey, salt, wine Vinegar, Soya Sauce specified above and the chili-garlic paste you just made.
  4. Mix them well and your Schezwan Sauce is ready.

Chicken & Shrimp
  1. Now lets make the Chicken & Shrimp ready.
  2. Take 3-4 Tablespoons Vegetable Oil in a skillet in medium flame. Add ¼ Teaspoon Red Chili Flakes once the oil is hot.
  3. Then add the marinated Chicken and Shrimp and stir for few mins.
  4. Add 1 Tablespoon Schezwan Sauce you have already made and stir again.
  5. Add 1 Teaspoon Red Chili Sauce and salt.
  6. Once the Chicken and Shrimp is almost cooked, reduce the flame to simmer, add another Tablespoon of Schezwan Sauce and mix well.
  7. Keep the Chicken & Shrimp aside.

Boiling The Noodles
  1. Take water in a large pot in medium-high flame and add some salt.
  2. When the water is hot add the noodles.
  3. Once the noodles are cooked, drain the hot water and rinse (wash) the noodles with normal water. The normal cold water will take away the stickiness from the noodles.
  4. Add 1 Tablespoon Vegetable Oil in the noodles and mix it nicely by hand.
  5. You will see the noodles are not sticking to each other once you rinse them in cold water and apply oil.

Final Step
  1. Cut the carrot and cabbage in thin long strips.
  2. Take 2 Tablespoons Vegetable Oil in a large wok in medium heat.
  3. Once the oil is hot add the vegetables and stir for few mins. You can cover the wok with a lid so that the vegetables can be cooked faster.
  4. Add the noodles and stir with two spatulas.
  5. Then add 7 Tablespoons of Schezwan Sauce and mix well with the noodles.
  6. Add 3 Tablespoons of Red Chili sauce and mix again.
  7. Add the cooked Chicken and Shrimp.
  8. Add Salt if needed and at the end add the Lemon Juice.

  9. Your Schezwan Noodles with Chicken and Shrimp is now ready, serve it hot.
Notes
You can use Vegetable oil as a substitute of sesame oil.
Don't boil the noodles for long time, it will become very soft.
If you forgot to soak the red chili, you can always boil them for few mins and then blend them.
