Schezwan Noodles with Chicken and Shrimp is one of my most favorite Indo-Chinese recipe. The essence of hot chili and garlic will lure you towards it. The homemade Schezwan sauce adds the extra flavor to the noodles. Thin noodles are the best ones to make this recipe. Generally the vegetables are cut in thin strips to go along with the noodles.
I have prepared the Chicken & Shrimp ahead so add the extra taste to it. Once you add the Schezwan sauce while making the Chicken and Shrimp it will stick to them which taste even better. You can always purchase ready made the Schezwan sauce. I have once used that to make this at home, however it wasn’t that great. So I made the Schezwan sauce at home and it was very delicious. I would encourage to stay away from the ready made Schezwan sauce. They will also have good amount of unhealthy preservatives. You can also store the homemade Schezwan sauce in refrigerator for many days.
The secret to make noodles always smooth and not sticky, is to rinse them in cold water and apply oil afterwards. You can use this process in any noodles recipe.
You should be able to make restaurant style Schezwan Noodles with Chicken and Shrimp if you follow this recipe.
- 250gm Chicken
- 100gm Shrimp (Medium size)
- 1 Tablespoon Soya Sauce
- ½ Tablespoon Wine Vinegar
- ⅛ Teaspoon Black Pepper Powder
- 75gm Garlic Chopped (Approximately 5 Tablespoons )
- 20 Pieces Whole Dry Red Chili
- 1 Tablespoon Ginger ( Chopped or Paste )
- 3 Tablespoons Sesame Oil/Till Oil (Vegetable Oil as substitute)
- 1 Tablespoon Honey
- ½ Teaspoon Salt
- 1 Tablespoon Wine Vinegar
- 1 Tablespoon Soya Sauce
- 3-4 Tablespoons Vegetable Oil
- ½ Teaspoon Red Chili Flakes
- ¼ Teaspoon Salt
- 1 Tablespoon Red Chili Sauce
- 300gm Noodles
- ½ Teaspoon Salt
- 1 Tablespoon Vegetable Oil
- 2 Tablespoons Vegetable Oil
- 130gm Cabbage
- 230gm Carrot
- 130gm Bell Pepper/Capsicum
- ½ Teaspoon Red Chili Flakes
- 3 Tablespoons Red Chili Sauce
- 1 Tablespoon Lemon Juice
- Salt (if needed)
- Cut the chicken in small pieces, then marinate both the Chicken and Shrimp for ½ an hour with the ingredients mentioned above.
- You need to soak the Dry Red Chili in water well ahead at least for 4-5 hours. Take a blender, add the soft red chili, garlic, ginger and make a paste.
- Heat Sesame Oil in a small pan and keep it in a small bowl.
- While the oil is hot, add honey, salt, wine Vinegar, Soya Sauce specified above and the chili-garlic paste you just made.
- Mix them well and your Schezwan Sauce is ready.
- Now lets make the Chicken & Shrimp ready.
- Take 3-4 Tablespoons Vegetable Oil in a skillet in medium flame. Add ¼ Teaspoon Red Chili Flakes once the oil is hot.
- Then add the marinated Chicken and Shrimp and stir for few mins.
- Add 1 Tablespoon Schezwan Sauce you have already made and stir again.
- Add 1 Teaspoon Red Chili Sauce and salt.
- Once the Chicken and Shrimp is almost cooked, reduce the flame to simmer, add another Tablespoon of Schezwan Sauce and mix well.
- Keep the Chicken & Shrimp aside.
- Take water in a large pot in medium-high flame and add some salt.
- When the water is hot add the noodles.
- Once the noodles are cooked, drain the hot water and rinse (wash) the noodles with normal water. The normal cold water will take away the stickiness from the noodles.
- Add 1 Tablespoon Vegetable Oil in the noodles and mix it nicely by hand.
- You will see the noodles are not sticking to each other once you rinse them in cold water and apply oil.
- Cut the carrot and cabbage in thin long strips.
- Take 2 Tablespoons Vegetable Oil in a large wok in medium heat.
- Once the oil is hot add the vegetables and stir for few mins. You can cover the wok with a lid so that the vegetables can be cooked faster.
- Add the noodles and stir with two spatulas.
- Then add 7 Tablespoons of Schezwan Sauce and mix well with the noodles.
- Add 3 Tablespoons of Red Chili sauce and mix again.
- Add the cooked Chicken and Shrimp.
- Add Salt if needed and at the end add the Lemon Juice.
- Your Schezwan Noodles with Chicken and Shrimp is now ready, serve it hot.
Don't boil the noodles for long time, it will become very soft.
If you forgot to soak the red chili, you can always boil them for few mins and then blend them.
