Nothing can beat a bowl of warm soup in a winter season, it’s warming and energetic. My fingers generally stay cold, so soup is one of my favorite dish during winter season. I love to touch the warm bowl and enjoy every mouthful of the delicious ambrosia. Since last week temperature is below freezing due to the polar vortex. My instinct told me to make some soup in this frosty weather.
A homemade soup (without excess sodium like you get in supermarket) will warm you up and always satisfy your taste buds. I have already shared chicken soup & mushroom soup with you guys. However, this time I will be sharing a nice creamy flavorful blended soup made with roasted tomato (Tomato Soup). You must try this tomato soup recipe once in your kitchen. I will assure you that you won’t be disappointed.
I roasted the tomato, onion and garlic so that strong raw flavor of the tomato will be somewhat reduced and other flavors can also be found.
In this recipe you can use any type of tomatoes but my suggestion is to buy the tomatoes from local farmers market with steam on, since they will have the garden freshness.I found out that Tomato Soup is one of the most popular soup in Poland and United States. However, now a days its has become ubiquitous dish. Tomato is the main ingredients in this soup, however it can be made in various way.
Many of you may not know that tomato has lots of health benefits. It’s is a good source of Vitamins (A,C,K) and potassium. It helps to protect your skin against damage. Tomato soup also helps to lose weight by burning calories and fat deposits from the body.

I was super busy due to many changes in my personal life, although meanwhile I have tried many different types of recipe. However, I couldn’t get time to post these recipes. Even though I am still busy I have promised myself to frequently post the recipes.
- 1 pound Tomato
- 6-8 Cloves Of Garlic
- 1 Medium Size Onion
- 1-2 Tablespoon Olive Oil
- Salt(as per taste)
- Pepper(as needed)
- 2-3 Cups Of Chicken Broth/Vegetable Broth/Plain Water
- Butter
- ¾ Cup Fresh Cream
- Cut the tomato and onion in medium size pieces, then spread the tomato ,onion and garlic in a baking tray. Drizzle some olive oil, salt and pepper.
- Preheat the oven to 450 F, place the baking tray into the oven and bake the onion and tomato for 15-20 minutes.
- Now put the roasted vegetable into the blender and make a puree. Then drain the puree using a strainer.
- Add butter in a nonstick pan,then put 1 bay leaf. .when the aroma comes down add puree and chicken stock .Bring it to a boil, unit it has reduce into half.
- Now put fresh cream into the soup and bring it into the boil and adjust the consistency.
- Add salt and freshly crush black pepper. Now your yummy Tomato soup is ready for serve. sprinkle some dry basil .and put bread croutons on top the soup.
